What Making 2,000 Waffles Taught Us

Fast forward to last weekend: we made two thousand waffles. In a commercial kitchen. In one weekend. And I learned three things I haven't stopped thinking about since.

There's so much you can't control. The night before, on my way to grab our last ingredients, I got a flat tire. Then the kitchen's breaker kept tripping.. everytime we plugged in our multiple waffle irons the breaker was tripping.. so I was running around like a mad woman every 30 seconds back to the breaker so we could keep the waffles cooking while they were in the iron!! it was frustrating and crazy because we never thought this would happen... You can plan for a lot of things. You cannot plan for a breaker with an agenda. SOO grace. Lots of it.

If you're type B like me, buy extra of everything. And make a list. I fat-fingered a number in my spreadsheet and we didn't have enough eggs.😮 I also somehow forgot our scale... the thing you measure ingredients with... the thing we need to measure out every ingredient in our recipes... on manufacturing day. Thank goodness for Instacart.

Have fun with it. I was stressed the entire weekend!! the process, the volume, worrying about wasting ingredients. I was in my head the whole time. And somewhere in there I realized: if I'm not going to enjoy this, this road is going to feel really, really long. So I told myself to stop being so silly and enjoy the moments. Because there's no such thing as failure here. Only learning, and growing, while we do this.

And you know what? The waffles turned out gorgeous. Bumps and all.

One Seat Closer

That first run is what will be sitting in coolers across Jacksonville this coming week and at our upcoming events!! Every run from here gets a little smoother, a little more us. If you've got your waffles coming this week. I hope they taste like a little bit of home and you and your family enjoy them <3

More soon. 🤍
