What is Sourdough and why does everyone say its better for your gut?
Breanna EmholtzIf you've spent any time on the internet or your feed is filled with everything sourdough you've probably heard that sourdough is 'good for your gut'. If you've scrolled Haven's instagram, met us at a farmers market, or talked with me, you've probably heard us the term "real fermentation". We don't use it as a buzzword. Its truly the whole point of sourdough.
So let's talk about why.
it starts with a starter, not a strategy
Long before Haven was a brand, it was a jar on my counter. The sourdough starter I fed morning and night, the same way people have been feeding starters for hundreds of years. There was no health trend behind it, no ingredient list. Just flour, water, time and the quiet, stubborn patience that fermentation demands.
That's the thing about real fermentation: it can't be rushed. It doesn't care about your timeline. You can't shortcut the 24-hour rise and call it sourdough. Somewhere in all that waiting, I fell in love with what it actually does to food. The flavor it builds, the texture it creates, the way it turns simple ingredients into something that tastes like it has a history.
why it matters to us (and why we won't shortcut it)
Most frozen breakfast food isn't made this way. It's made fast, because fast is cheaper and easier to scale. We get why that's tempting, don't get me wrong, we've felt the pressure of it ourselves, trying to figure out how to bring Haven from a porch to a freezer without losing what made it Haven in the first place.
But here's where we landed: long-fermented isn't a feature we bolted on. It's the reason this brand exists. Every waffle product goes through a real, traditionally fermented flour process. No shortcuts. Just time, done the way it's always been done, made possible at a scale that actually fits into your freezer and your morning.
We use gut-friendly ingredients and traditional methods because that's genuinely how we feed our own families, not because it is "trendy". We're not here to make you a promise about what fermentation "does" for you. We're not doctors and this isn't a claim about your health. What we can tell you is this: it's how bread has been made for most of human history, it's how my great grandmother made it, and it's the only way thats ever felt right to us.
clean label isn't a marketing category, it's a filter
If you've read our ingredient lists, you've probably noticed there isn't some crazy language or science equations you have to type into AI to figure out what it is. That's on purpose. Every ingredient in a Haven product had to earn its place by answering one question: would we feel good feeding this to our kids? Does this fuel my body for a day of being a mom, wife, business owner, moving my body, etc...
That question ruled out a lot of things you'll find in a typical freezer aisle. It's also the reason our waffles take longer to make than most, cost a little more to produce, and we think taste like something worth waiting for.
what the research says
We're not going to make promises about what our waffles will do for your body, that's not something we're qualified to claim, and honestly, the science isn't as tidy as marketing often makes it sound. But it's worth sharing what researchers have actually found, because it's part of why long fermentation has always felt worth the extra time to us.
Several studies have found that sourdough, fermented slowly with wild yeast and lactic acid bacteria, tends to produce a lower blood sugar and insulin response than bread made with commercial yeast and no fermentation time. Researchers point to the organic acids created during fermentation, which may slow how quickly the body digests starch and how fast food moves through the stomach. A few clinical trials have shown meaningfully lower post-meal glucose spikes with sourdough compared to conventional bread.
What we can tell you with confidence is this: real fermentation is not a shortcut, and it's not nothing either. It's an old, patient process that food science is still actively studying and one we believe is worth doing right.
Two other things researchers have found worth mentioning:
Gluten structure changes during fermentation. As sourdough ferments naturally occurring bacteria and enzymes go to work breaking down some of the gluten proteins in the flour. This process is part of what makes long-fermented bread easier for many people to digest than bread made with little to no fermentation time. To be clear: this does not make our bread gluten-free, and it is not safe for anyone with celiac disease or a diagnosed gluten allergy. If that's you, please don't treat "long-fermented" as a substitute for "gluten-free."
Minerals become easier for your body to access. Whole grains naturally contain phytic acid, a compound that can bind to minerals like magnesium, iron, zinc, and calcium which make them harder for your body to absorb. Research on sourdough fermentation has fairly consistently shown that the wild yeast and bacteria involved break down a meaningful portion of that phytic acid, which several studies link to improved mineral bioavailability, meaning more of what's naturally in the grain may actually be accessible to your body, not just present on a nutrition label.
the honest version
We're not going to stand here and tell you fermentation is magic or make big promises we can't back up. Thank's for nerding out with me for a second.. I truly think fermentation is soooo cool and whats even cooler is since we ferment we don't have to add baking soda or powder in our waffles to get the rise!! I also think the method of fermentation, slowing the process down, letting the live cultures predigest the wheat for our bodies, and going back to how our great grannies made food... that's what I think most of us are now craving in todays world.
BUTTTTT That's why we ferment. Not because it's trendy. Because it's true to where this all started, and we weren't willing to lose that on the way to your freezer!
I would love to answer any and all questions regarding fermentation if you have any!!
